first off the car idle speed starts off slow and ruff around 8500-9000
at it’s high untill the car warms up then it runs faster and faster till
around 3000rpm and the car dies and I have to wait till the engine cools
down before it will start again this process takes about 15 to 20 min .

I have seen stuck open electronic injectors and some stuck closed.
Does this help?
Did you pinpoint whether it was a fuel or ignition problem?
I had an intermittent miss in my GTi engine which happened more in the morning
when it was wet or dry outside. When it warmed up it seemed fine even driving
in the rain.
I connected it to a scope and it was the spark plug wires.
I hate guessing. I like to determine what is NOT causing the problem before I
start changing parts. Cheap and lazy I guess. lol
How did you check the timing on the Digifant? Does Haynes also make you check
total advance which will test the knock sensor?
How is the compression of the cylinders?
Did you try to find out which cylinder is missing?
Carb cleaner can help you check for vacuum leaks esp. at the fuel injector
seals.
I only like Bosch rotors and caps. Did you use the correct rotor?

that would make sense, if the problem was so sporadic.

Did you try sn ignition coil, especially if it has a silver tage on it. The
better coils had green tags. BTW I have several ECU’s here.

you can listen to the injectors click with either a long screwdriver or a
decent automotive stethoscope. no click in only one of them = bad injector!
BTW I have seen some terminals for the injectors either broken or pulled
off/out some too!
Stethoscope helps locate offending injector, but you need to check wiring to
it!
